How to Apply a Moisture Loss Calculation
Moisture Loss is a Yield Adjustment applied to a Recipe. Go to any recipe in your account to try it out
1. In a Recipe, once all ingredients are added and the recipe is saved, click on "Yield Adjustments"
2. Select either grams or percent. You can calculate this by weighing the item before and after cooking.
3. In this case our moisture loss is 12%
4. Let MenuSano know the cooking method for the recipe so it can calculate the moisture loss changes to
the nutrition.
5. In this example, our bread recipe will be "baked or roasted"
6. For each ingredient, select a classification. MenuSano will calculate the nutrient change at the
ingredient level. There may not be an applicable classification, which is ok. In this case leave it as
"None Applicable."
7. Similarly, there may be a suitable sub classification. Click on the dropdown to view your options, Select
the one that applies.
8. For example, Wheat Flour is a grain or grain product
9. It's sub category is "flour or starch"
10. When finished, click "Update". Make sure you SAVE your recipe before exporting the label or simply to save for later.
